Why are Kennet Crayfish superior?

Trapped exclusively along the River Kennet, our signal crayfish (pacifastacus leniusculus) are from some of the only chalk streams in the world which gives them their unique and delicious flavour due to the purified water. Permeating through chalk bedrock, our waters are gin-clear and nutrient rich which provides us with such amazing fish.

Cleaner, with a sweeter, more delicate flavour, we really think our crayfish are the finest available in the UK. Kennet Crayfish have been used in numerous Michelin-starred restaurants in the past because of their superior taste and quality.

Our fish are always fresh never frozen.

Like all things wild, our Kennet Crayfish are dictated by seasonality. The main season for fishing crayfish is during the summer months between June and September. We still have the highest quality, best tasting fish year round, however towards the end of the summer high season the females begin to carry eggs (Roe) ready for spawning in the new year. The roe is an absolutely delicious bonus, and many people prefer the winter fish for this reason, yum! Male crayfish also start producing reproductive glands in this period, ready for mating. Despite the fact you may notice these eggs and glands in the fish, the winter period does not compromise the taste of our fish in any way. By eating our crays during this reproductive period, you are really helping cut down the population of this delicious invasive species too, which is always a great thing for our British waterways.
